Whatever your reason, please join us for a ONE DAY short course to learn about pork carcasses and pork retail cuts. In the course, we will learn some meat science basics and walk through how to fabricate a pork carcass, one cut at a time.In addition, we will overview how to make bacon from fresh pork side and smoke a whole ham.
